^ Based on this thread, the guy says that Virtual Server 2005 goes at 100 mbps instead of using the gigabit network card on the physical machine.
Is there a way of getting it to run with the gigabit network card?

The issue is that VPC has a software copy of a nic. Unless MS offers a substitute that has gig you can't install it.
No matter the solution you can't use the gig speed. Not much more above the 100m speed there becomes backplane and memory speed issues.
You might get better performance if you offload check sums to real installed nic. That reduces cpu times. Just messes up wireshark.
If you are trying to go from VM to VM you might notice better than expected results that one would from a 100m.
