Setup & Stimulate VM Testlab Networking

Specs: Windows 2008
Wanting to setup a VMware test lab for studying SCCM ect. Have 1 pc that is hosting VMware workstation and can run about 8 guests also have a laptop that can run another OS on the physical network. I want to simulate a multi-site network in the VM environment (London, NYC ect)

I was thinking having a W2K8R2 server in each VM LAN with 2 NIC's acting as a router to the real network/internet and being a DC/DCHP/DNS server in the VM LAN. Then have another VM for the SCCM server, client ect.

The thing I'm not sure of is as it is just a home network, what IP address/type do I assign to the VM's NIC connected to the home network?
