Setup a publi wireless access point

The company I work for wants to allow visitors wireless internet access, but block them from our internal network.
Right now we have a Server 2003 box running our DHCP and DNS for every pc (xp) in the building, everyone has a 192.168.0.x address. We have 2 remote offices with VPNs setup that have 192.168.1.x and 192.168.2.x.
Am I correct in assuming I can block access to our network by just allowing the *new* wireless router to assign the DNS and give an IP range of something like 192.168.100.x ? It seems pretty straight forward to me, but in my experience nothing is as easy as it initially seems.
