Setting Folder/File Permissions

I have a small network with 7 PC's as follows:
a). Me (Desktop - XP Pro)
b). The Boss (Laptop - Vista)
c). Secretary (Desktop - XP Pro)
d). Fred (Desktop - XP Pro)
e). Barney (Laptop - Vista)
f). Server (Desktop - XP Pro)
g). Workshop (Desktop - XP Pro [To be Setup with Wireless card])

All PC's are connected via LAN cable to Cisco 857W (Wireless Capable) Router, except 1 PC that will (not connected to Network yet) by a Wireless Network Card.
Currently Wireless is NOT Enabled on the Router yet.
Currently ALL files/folders on the server PC are in the Shared Documents Folder on the Server.

All PC's run XP Pro, except for the 2 laptop's (LAN cable connected) running Vista.

What is the most effective way to set up a LIMITED Permission of Access from the PC with the Wireless Card to be installed?
I want designated folders/files to be accessed, but others NOT accessible.

Do i shift all folders/files NOT to be Accessed from the Shared Documents(on the Server PC) to My Documents?
Or is it not that simple?

Also can i Disable Internet Access from this PC too somehow, or restrict access to designated sites only ?

The most effective way of course is to use "user accounts" and "permissions" on the ACL of shares.

First, you need to figure out who gets access to what, and who doesn't. I would recommend getting a pen and piece of paper and figure it out.

If you have some files that everybody get's access to, put them all in one folder. Add all user accounts to the ACL of that share.

Other files that only some people get access to, put in separate folders and add the appropriate user accounts to the ACL on that share. Don't add the people you don't want to have access.

You'll want to play around a little bit to get your permissions and such just right before putting this into production.

If you want no internet access, statically assign and IP address but do not give it a "default gateway" address. This will allow the wireless client to access the LAN, but not the internet.
