Depends on what type of cable you are using. RJ45, RJ11 only referes to the type of plug or socket.

It's not dependent on the type of cable. It's dependent on the usage.

Is this for a T1 connection, or a (1 or 2 line) phone connection?

If it's for a phone connection, then the most common pinout/color code for the RJ45 side would be T568A.

The RJ11 jack would use the orange and blue pairs in the same order as the RJ45 jack.

Phone wiring uses the USOC wiring standard.
