What would you prefer to use for remote Desktop contorl over IP, Windows RDP or the VNC application?

Depends on what version of VNC you'd like to use.
If you use the free version, the connection is not encrypted.
If you use VNC that supports encryption, I would suggest to use VNC.
See the feature list on the VNC homepage.

Sound redirection is not supported by VNC at this time.
