MS Office Visio is a great little tool for mapping a network. Looks professional and saves a lot of work.
I would say to start at the Lowest Common Denominator and work out from there. That would be your exteral connection (T1, Cable, Fiber,DSL, etc.).
Then you can make it as complex as you need. You can draw out patch pannels,Server Racks, Routers, etc. or just your IP Scope, Coverage Design (Wired vs Wireless etc.).
If you don't need detailed drawings and labels, a MS Word document outlining the basics will do the trick.
