I have a piece of software that says it can send mail though a MX server instead of an SMTP server. What is this, and where can I find more information on it?

MX is short for "Mail eXchange record", and is used to identify the mail server(s) for a domain. It is not a "type" of mail server, just an identifier. When you send mail through a mail exchanger, that server will almost always be an SMTP server.

What is the software you're using? In what context does it refer to "sending mail through an MX server"?

Actually it said: sending mail directly to MX not needing your own SMTP server.

That makes sense, I guess. I would read that as "sending mail directly to MX (meaning a third-party mail exchanger) not needing your own SMTP server". That's a pretty good description of how email works.

I'm still curious; what program is this?
