I've decided to partly upgrade my home network from 10mbps Coaxial to a 100mpbs UTP.

Well ... before I stared

I had a server running Win2000 Pro with 2 network cards, 1 going to the BNC network and the other to a cable modem.

The server would assign IP addresses to all other computers using the 192.168.0.x range so they can use Internet Conneciton Sharing.

Now ...

I've added another network card to run 100mpbs UTP, but I've run into 2 problems.

I've managed to get the server to bridge the two networks so every computer can see each other, but...

[1] I can only use DHCP on one of the network cards because the it wants to use the 192.168.0.x range by default or else the client computers wont see the server. This means I cannot use both halfs on DHCP because they would conflict.

[2] Internet Connection Sharing only seems to share with one network card with a static IP of 192.168.0.1 which seems a bit limiting.

Does anyone know of any way to help solve this problem?

I know of two round-about options which would be to upgrade the whole network to 100mbps or use a proxy server. I'm hoping to avoid these as best as I can.

Did you exclude 192.168.0.1 from your scope? If not this may cause a conflict.
Create two seperate scopes 192.168.0.2-49 for the first card and 192.168.0.50-99 for the second nic. This should enable you to use dhcp on both nics. If this isnt the answer you were lokkin for please feel free to email me, I would be more than happy to help you further.
