I have a hypothetical question. I know how to link two switches together with a crossover cable. My question is would performance improve if I added a second crossover cable between the two switches? Would it even work? Thanks.

Not with out an MLT

You'll cause a huge broadcast loop, which will either take down the network or STP will disable one of the links to stop the loop.
