At the college, the laptops are on a domain. I would like to print to my server's printer. The printer is shared, but I have no clue how to set up internet printing in XP. Is there a way to set up XP Pro to be an internet print server?

You mean a network printer, not an internet printer. If the printer is shared, list it in the directory add the printer to each machine.

How do I list it in the directory? My server is not on the domain.

What is giving your server an IP address? Is it on the same subnet as the computers that you want to have access to the printer? How is the printer connected to your server?
