Its been about a year since I've used my practice routers (2514 and 2501) for studying to obtain the CCNA. I have no idea what settings and routes are on there, and I would like to start from the default settings (without harming the IOS). How can I do this? Thanks.

Just log in to the box, type following commands. Write erase command will erase the IOS in memory and will fall back to factory default after rebooting.
>enable >write erase turn off and turn on the device.
