domain name and Exchange e-mail

I have a question regarding Exchange e-mail. We have a small business that is currently only setup with POP e-mail that we download to a few workstations. We also have a domain name that is for example "domain.com". The way our e-mail currently configured is that in order to send e-mail to our ISP hosted mail server you just send it to any name @domain.com. So basically someone could send to a name of anything that they wanted to as long as the "@domain.com" was used we could download this e-mail via our POP3 e-mail client from our ISP. The problem is that now we are implementing a new SBS 2003 server which will enable us to use Exchange 2003, and I am not sure how to change the e-mail situation. We will be changing ISP, and probably use SMTP instead of POP3. I know that I can setup users in Exchange, for example "chris@domain.com". So if I setup to host my own e-mail, will I still get all of the SPAM from users that send to names that aren't users within my domain or LAN? For example, If I setup my SBS 2003 server to host my own e-mail, and I setup a number of user names to use, will I still get mail on my server that is addressed to a name that isn't a user on my LAN even it is the same extension (i.e. @domain.com)? This is hard to explain. After I here your replies, I will try to make this a little clearer
