creating exchange on domain with another doma

Specs: windows server 2003
In our class we are running a domain that only runs AD, DNS and DHCP. We teach a class where we need to have students join a domain and configure Microsoft outlook. We need to know if we can create a seperate domain that runs Exchange server. We would rather not keep building this on our main domain. Is there a solution to this problem?

Am I reading this right? You are using the schools administrative network in conjunction with a student lab?

Students should have no access to the schools network except thru it to access the internet.

All labs/classroom scenerios would be setup as images on virtual servers and loaded when required.
