How can I connect or stack two Cisco 2900XL switches together? Can I just run a straight through cable from port to port?

You need a crossover cable as they are 'like' devices.

I think you can also use fiber too.

Not unless you have the WS-C2912MF-XL or WS-C2924MF-XL models that support the 100BaseFX fiber module, not to mention the fiber patch cable.
