I ran Cat6 wiring throughout the house. I cut off the connectors to accommodate the stripped wires being screwed into the backside off a network wall plate. What colors from the Cat6 wires match up to the eight wires on the back of the wall plate. The wall plate wires are different colors from the cable wires.

They should be the same color. Every Cat 5/5e and 6 cable I've worked with has the same standard 4 colors, Green, Orange, Blue and Brown. Every keystone I've worked with (the RJ-45 that snaps into the faceplate on a wall outlet) has the exact same colors.
What colors do you have on the keystones? It might be worth the $$$ to upgrade to newer keystones.
If the wall plates have wires then they are not standard RJ-45
jacks. New jacks are pushdown. Get new plates and
keystones.
I do not have keystones. The wall plates are made by GE and are a combo for a coax connection and above it a Ethernet connection. On the backside are 8 screws that have colored wires. You loosen the screws and attach the Cat6 wiring to them.
Trace the pins to the wires. The plates were probably made with
telephone color codes especially if it has red,yellow and black
wires.
