Will a CAT5E cable work when running a 10Base-T Ethernet peer to peer network? Using a crossover cable or do I have to purchase just regular Cat5 crossover cable?

The cable will work fine. It's more than you need, but that's OK.

To connect the two PC's directly to each other, you need the crossover cable, if you're using a hub of some sort, you need standard cables.
