what is the differences between CAT 5 cable and a cable that we use between modem and computer.

There isn't? CAT5 is a specific specification (subcategory) of "Ethernet Cable). There is also CAT6 and CAT5e. They don't have any obvious visual differences and for most users, the three are interchangeable.

The difference becomes on how that cable is wired; crossover or straight through [regular patch cable].

Don't forget abot the Roll-over. Okay, so it is pretty much only used to connect a computer to Cisco's router control port.
Yes, you'll want a standard patch cable to go from your Computer to the router(hub, or switch).
The cross-over is needed for direct computer to computer communication without a medium such as a hub, router, or switch.
Cat5, or 5e look pretty much the same at a quick glance. Flat twisted vs round twisted is going to blind side some.
Cat6, or 6a is noticibly thicker than Cat5 cabling.
