Specs: Macintosh
I am installing all this CAT 6 cable over the office.. our old phone lines are f**'d up... so I was also going to run new phone cable.. but I heard somewhere that cat6 is basically the same cable.. can I run two cables, one for phone, one for internet and just have different jacks on the end?

Cat 6 ethernet cable is 4 twisted pairs of copper wires. I read somewhere that the difference between cat 6 and cat 5 or cat 5e is more twists per meter and better quality connections. So to answer your queston you most certainly can and some people reckon you can get a better quality connection by doing so. Just take a copper pair and use it where you would normally have your old phone cables.
