Backing Up Individual PST Files

Specs: Windows XP - 7, 4 Gb
So we have multiple users who use different flavors of Outlook. Each has a local PST file (or 2 or 3). We are looking for a good method to backup those individual PST files. Some are laptops, some are desktops. We have tried Carbonite, but my 2.5 Gb PST file has been trying to get the initial copy to Carbonite made for 3 days now. We have also tried the Outlook PST Backup Utility. It works, but is not ideal because the user still must invoke the backup. Plus it still takes 8-10 minutes to copy my PST file to the backup location on the file server (100mbps network).
We have looked at the Network Attached Storage devices from Seagate, NetGear and Buffalo. Any experience with these and speed?
I know the best answer may be "why don't you just get Exchange Server??"....
Any additional input is appreciated

Keep your PST files on a centralised server and back it up from there

are you really suggesting we save and access 2Gb plus PST files over the network? Surely that is not the best solution.
