go to the system\system directory and open the file autoexec.ncf with notepad. Here are the server settings, including the IP addy. change it, reboot the server. If your server is also responsible for the DHCP, you'll have to adjust the DHCP scope.

from the system console, type inetcfg go to bindings and select the NIC and change the IP there, remember when you exit out to re-initialize the system.
