Setting Apple Mail smtp port

Did anyone end up having an answer to the question about setting the smtp port in Apple Mail?
The reason you would *want* to do this is if you are tunneling pop over ssh, and need to also tunnel smtp over ssh. Sure I could just get root to tunnel it as localhost:25, but I would prefer not to do that. Rather, since I have pop tunneled on localhost:9110, I would like to tunnel smtp on localhost:9025.

The Apple Mail program does not allow you to change the SMTP server port, so I guess the only way to do it would be to tunnel traffic from port 25 to another port.
