Mac RAM question

I've heard that the iMacs get a performance boost if you have two RAM chips installed -- is that another way of saying you get a performance hit if I only have one?

I was planning to get my iMac with the 1x 1-GB configuration and upgrading it in a year or so to delay some of the up-front cost, but I don't want to do it that way if my system is going to be slow.

As far as I know, there is no difference between a 2x512MB
configuration and a 1x1GB configuration. I might be wrong
on this though. The main reason for going with the single
stick option is if you want to upgrade to more RAM later you
don't effectively throw away the extra 512 stick you have in
there to place something else in.
