imac or white G3?

The beige G3 board would probably be the better choice. Not only does it conform to the ATX standard for an easier case fit, but it has PCI slots and an easily upgraded processor. If you haven't checked out http://www.xlr8yourmac.com yet I'd say to. They have articles about building a Mac out of parts and such.
On another note, you might just want to buy a complete Beige G3 to start with. They're not too expensive on eBay, and you can make sure it's working. Many times when the mobos are sold seperate they don't have the ROM card or something. Plus I'm not sure if the power supply pinout is quite the same. I know it's different from regular ATX on the Blue and Whites.
