I plan on upgrading the hard drive for the iMac I ordered myself. If I go buy the hard drive, just any SATA that is compatible, when I boot up, what happens? Is there something to walk me through loading the OS or am I just lost?

You'll need to boot from the OS CD and format and install the system.

Okay, I've got my iMac from FedEx, and I've opened it up to install the new drive, but there's a cable I don't know anything about and am very afraid to touch. It looks sort of soddered to this grey frame, which is held in with an odd "star of david" looking screw. The two SATA cables popped out fine but I don't know what to do about that third one and I don't want to keep the 80GB drive, I've got a lovely 250GB waiting to take it's place.

The other cable is a temperature sensor that the machine uses to figure out how much/how fast to run the fan. The screw are called torx, you can get a screwdriver for them at any hardware store (or get a multi-tip screwdriver with a whole set of tips). You need to remove the old drive from the frame and then install the frame on your new drive before you can mount the drive in the iMac. See http://www.apple.com/support/doityourself and find the article on replacing the hard drive in your iMac.
However, that article assumes you are installing a drive you got from Apple. I am installing a Maxtor SATA drive (L01M200). When I try to reinstall MacOS X and I get to the "destination" screen, it sees my drive (after running Disk Utility), but it has a big red ! on it and says "You cannot install Mac OS X on this volume. You cannot start up your computer from using this volume." Hmmm. Tried using Disk Utility again to erase and repair the drive. Repair says the drive is OK. Not sure what to do next.
