I'm thinking of buying a brand new MAC. I guess that would be running OS 10.2 (Jaguar) I do a LOT of graphics work. What is the recommended hard drive size, i.e. memory I should have installed?

for me I use 256megs of ram hd is 60 gig I would need 120 gig

Hard drive depends on your work. Get as big as you can afford, better to have two, backups are important. OS X needs at least 300MB of memory to run decent, but again, get as much as you can afford. The more you have the better OS X will run. The new Macs can have 2GB of memory installed.

HD size is a personal decision... I am doing just fine with 30gb and 10gb is only MP3's. I suggest 512mb of ram for a computer running 10.2 but 256 will do just fine.
