disk imaging VS copying

I'm new with the mac, so forgive me if this sounds dumb. I've read one of these postings where someone made a boot disk just by copying the system folder to a disk. So is it just that simple? If it's that simple then why not just copy all the hd files to a CD and run it from there. why bother with disk img's if there's no boot sectors to worry about?
