desk top icons blink off every minute or so, plus soft ware shuts down too (eg. Photoshop or Freehand) after downloading update for 'Quicktime'.

Do you have Stuffit installed by chance? There is a problem with Stuffit AVR and the latest Quicktime update. Open the Stuffit AVR preference pane and click the "stop" button.
