You have to edit the grub configuration file. I've never used grub, I use lilo, so I can only guess that the config file is /etc/grub.conf.

This also happened to me when installing RedHat Linux 7.2 . Tom is correct in saying that the grub.conf file must be editted. Simply add the following lines to the file:
title Windows XP root (hd0,0) makeactive chainloader +1
Now reboot and you should have the option of booting Windows XP.
