It is in the Network setup GUI. Click the RedHat icon, system settings, network (enter root password if prompted), DNS tab and change the hostname. Click file, save and then reboot.

Use the "hostname" command as root and edit the file /etc/HOSTNAME. I also think redhat checks /etc/sysconfig/network too so you may want to edit that as well.
