search google. tons of articles and books are available for setting up an email server.
you can use sendmail for sending email.
if you want the computer to receive email in the name of a domain, you will need to setup dns servers as well.
http://www.samag.com/documents/s=1168/sam0002f/0002f.htm has a guide for some of this. you will likely need to do a lot of reading. i suggest getting a book.
