I'm not to sure where but you download Linux and just choose not to install Xwindows.

There are a few ways to do this.
#1. Most decent Linux Distributions let you install from FTP. In other words, find one that does,(I know for a fact Slackware.com will allow FTP install) grab only the floppy disk images to start setup then only the options you've choose will be downloaded and installed.
#2 Simply visit an FTP site for the distro you want (most people use RedHat ftp.redhat.com) and download only the programs you want. This is much more of a hassle. If you have a slow connection I would recomend buying a Linux CD for 2$ online, or if you can't even afford that and can wait several weeks, you can get a free Linux CD from: http://www.pogolinux.com/systems/accessories/linux/
