I am currently looking for domain hosting for my website(when I build it) the company I am considering (Dotster)offers both Linux and Win2000 servers to host the site, I am hoping someone can tell me what the pros and cons are between these two o/s and whether I am going to notice any differences when I view a page. I'm new to all of this so any advice would be appreciated.

Depends on what YOU need.

Windows is good for Windows stuff. If you want to run Frontpage, Outlook, ASP, this is what Windows is good for. But Windows hosting often costs more, is less stable, is less capable of handling large amounts of traffic (multitasking), and is not as robust as Linux.

Linux hosting takes a little bit more knowledge to do, so your host will probably be smarter than a windows admin. It costs less because Linux is free. It can usually do "Windows things" better than Windows, but some people will fight this. Hosting with linux will take a little bit of reading on your part. You will have more control than in a Windows environment, where you would most likely be asking your host to make the changes you need want.

I would look for a linux or unix host. Windows is just plain nasty!

I am gonna have to agree with Tim up there. if you like point and click and crash go windows if you like stability not quite as ease of use but stability which would be key in a webserver or any server the more stable the better. I have had a 386 computer running a ftp webpage telnet and xdmcp server all in one and it never crashed not even once. give Linux a try you can beat something that says FREE. Do it!!
