I'd like to configure a RAID 1 on our existing install of RedHat AS 3. We currently have an additional hard drive that is the exact size as the existing drive. FDISK -l displays the following...

Well, yes. You would need to format any media unless you wanted to use it raw.

is a software example.If you want a hardware solution it is much different. You make the raid in the hardware tools.
