There is a distro called E-Smith (www.e-smith.org). It is based on Redhat and is super easy to setup. You can download the .iso image from thier website and burn it onto CD. Boot to it and it will ask you about 5 questions and then installs. Everything is done via a web interface so you dont HAVE to know Linux. It does proxying and can also use Squidgaurd to filter websites if you are interested in that. We use it for our clients, which mainly consist of schools, they like it because its free and easy to use. It also integrates a file server, web server, mail server, and other cool stuff. Email me if you have any questions or want some good resources for the E-Smith distro.
