Use a Linux distribution that is bootable (i.e. no need to install anything). With a few configuration changes, you can set up your firewall. Have at least two ethernet connections (one of them going to a switch to share the connection) and you are set. Each firewall distro has different setups, so consult the documentation (or use a forum if applicable).
You have lots of choices (not to mention that any distro can be set up to act as a LAN firewall). Look at FreeSCO, and Coyote first. You will find in Google searchs a FloppyFW, which was popular but is no longer being maintained.
