Not really a great deal. They are all computers the real difference is the way they are used.
The desktop is the most common. It is a computer that is used for everyday tasks. It is called a desktop because it sits on the desk. While it's not unusual for it to sit on the floor, it's still a desktop.
A workstation can be a dumb terminal or it can be a desktop with specialised high end components designed to perform a particular task. Such as one used for 3D design.
A server is often used to run a network. They tend to be built with reliability and speed in mind. There's no real need for multimedia so they are rarely equiped with sound cards and often don't even have a monitor.
