Firstly, this forum has been invaluable to me (novice) and I've got some really good expert advice. I'd just like to run a system upgrade past you to see what you think - this is the first time I've attempted an upgrade so any advice from people with similar systems would be great.

AMD Winchester 3200+
Asus A8N SLI S939 Nvnf4sli Atx
Corsair(VS1GBKIT400C3) 1024MB (2 x 512MB Matched Pair)
Leadtek WinFast PX6600GT-TDH128 EXTREME GeForce 6600 GT 128MB

Ok some questions...

Is it worth going for the ASUS Deluxe board?
Is the XFX 6600 GT SLI Graphics card better?
Should I choose RAM that is not in the Corsair "Value Select" range? and be going for the TWINX1024-3200C2PT
Someone told me that Antec PSUs are currently out of favour and the one to look for is the Tagan TG480-U01 what do you think?
and.... what's a cool functional case, is the Antec P160 any good?
Will I be able to run my old HDDs & DVD/CDs ok?
Or have I actually got it all completely wrong?

Any advice welcome, I've got broad shoulders.

Sounds like you have a real nice machine already. Why do you want to upgrade it?? Are you falling for the marketing machine hype or doesn't your machine work for what your doing with it??
