I have a Soltek SL-K8M800i-r mobo, and in the specs it says SATA RAID, can I install a single SATA HDD into it and it will work like a normal HDD?

Yes, but when installing XP on a SATA drive you need to install the Controller drivers..

Not if the SATA controller is native to the chipset - such as with the nForce 4 motherboards. Hower, most of the nForce 4 mobos have both the native SATA controller as well as a 3rd party SATA controller. You WOULD need to install the SATA drivers IF you used the ports for the 3rd party controller.
That board ^^ uses a VIA chipset and I am not aware if it's SATA controller is native or not.
