Recommend backup strategy for small business

Specs: Windows Server 2003
I work for a small business (8 employees), and
we have two servers each running Server 2003.
I'm looking for an affordable option for backing
up our servers and restoring them if
necessary.

I would like a bare-metal restore option so we
can restore to a slightly different hardware
configuration if we need to. Let me know what
you think!

Network Accessible Drives (NAS) Drives all the way. They are cheap and reliable. Then you can use ROBOCOPY which is a free Microsoft tool in conjunction with Microsoft Scheduler to backup your files to the NAS drives.

This is called Disk Imaging. I use Norton Ghost but there are many Disk Imagers out there.
