i was wondering what would be the best way to get the best performance from my RAM, currently i have 2x256mb RAM. but was thinking of upgrading it. should i buy 2x512mb or just 1x1gb and keep a 256mb?
which would work best do u reckon? and how could i configure it?

and could anyone email me some good recommended e-shops for RAM? (considering im in Englad please)

Ebuyer do some good RAM www.ebuyer.com. Personally i would go for the 2x512 if i could run them in dual channel mode.

If your board doesn't support dual channel mode, buying in pairs is unnecessary...but that's something you'll have to look into. Also, you need to know how many RAM slots you have available.
