OS: Windows XP Pro SP1
CPU/Ram: Athlon 64 3200+ / 1GB DDR

I have decided I am going to format my HDD and run them in Raid 0, Now can I do this

Leave my main HDD on Primary Channel 1 as Master and put the second HDD on the raid channel as Slave or have they both got to be Masters, haven't got any jumpers on me at the moment so don't want to format the PC if it isn't going to work

Put them as both masters. You want maximum data going through the channels.

Ideally, in all honesty, get one of these

FastTrak100 TX2 OR the TX4 version (obviously the TX4 is for four drives).

I have the TX2 and it is awesome. Very fast responses, BUT of course you have to have the same drive type on each channel, no mixing and matching like in software raid.

Anyhow... check ebay...

PS make SURE it is a FASTTRACK. The ULTRA100TX2 is only an IDE controller, the FASTTRACK is a hardware RAID card. Confusing, yes. But hey. That's how we like it.

If you only have one raid channel you have to put both drives on it if you expect to raid them. Master and slave. Raid0 means the disk with the OS will be wiped. You will have to install from scratch.
