is it true that ALL motherboard accept double sided ram, and NOT ALL motherboard accept single sided ram?

No generalisation is true. not even this one.
There have been very distinct generational advances in ram. visit www.crucial.com and use their guide to determine what ram will suit your system. They also have some info on the timeline of ram development.

Ooh, a boolean problem.
I've never run across a MB that didn't accept both. I think the bios will usually see a double sided stick as 2 singles.
It's the chip density that is key in if or how the bios sees the RAM. Newer sticks usually have higher density chips that older bios' can't decipher properly.
