Working with Envelopes
If you can't choose standard envelope size 7, you can specify a custom size.
"Versions for the Macintosh (Mac OS and Mac OS X) include the following"
"Microsoft Word 2008"
"Part of Office 2008"
I looked on the support pages for Office for Mac.
From the Word Forum - I searched for: envelope
and on the second page of "hits" I found this:

All paper sizes [envelope or otherwise] are provided by the printer driver,
not by Word. If the specific size you need isn't offered the Page Setup
dialog offers the Manage Custom Sizes option to specify custom sizes. Use
the + button in the Custom Paper Sizes dialog to add the custom size to the
list then double-click the default name to rename it as something
definitive, such as Envelope B5 or EnvC5, etc.
So - your printer, or muti-function printer, scanner, etc, , must have it's software installed properly, and the software must have the capability of listing standard size 7 envelopes.
Are you SURE you installed the printer, or muti-function printer, scanner, etc, , software properly ?
Did you follow the installation directions ?
Many people DO NOT install that properly.
E.g. If it's connected via a USB connection, you DO NOT plug in it's USB connection until AFTER you have installed at least some of the software for it, when you first install it's software.
You are often prompted to plug in the USB connection AFTER you have installed some of the software.
