Im currently running 2 sticks of 512MB PC2100 Ram But my mobo can take PC2700 But Im wondering if i would actually notice any difference if i was to change to PC2700?

I think it would be a waste of money unless you have plans for the slightly slower memory (2100 megabytes per second versus 2700) if/when you swap it out.
