I have a shuttle mn31n mobo and I have the ram sticks in slot 1 and 3. The manual says that's how to do it, but how can I make SURE that it's dual channel?

When booting one of the post screens should report your memory and state that it is running in dual channel mode.

What will it say? Like "1gig dual channel"
Will it say Single channel if it is? I'm not at my computer now, I'm at work, so I cant find out right away.

In the POST screens when the memory check is performed. Mine says DDR333 dual channel enabled. The screen before says how much memory.
