I have a choice. I can run two sticks of 1GB DDR400 each in dual channel, or 2x 1GB DDR400 and 2X 512MB DDR400 for a total of 3GB in single channel.

So the question is, 2GB dual or 3GB single?

Unless you are using a program that is extremely memory intense 3GB is overkill. I would say run the 2GB in dual channel. I have the same processor and am running 2GB total in dual channel mode. I noticed little change when I went to 2GB from 1GB. The exception is when I use my CAD program. Noticable difference there.

Most people will not notice a difference if they have more than 2gb.

There is only a very tiny advantage to using dual channel ram in any case - it is unlikely you would notice the difference.

Why is it that you can't run all 4 sticks in dual channel mode?

Update: apparently the statements I made in this post are wrong - see the following three responses.

Dual channel ram comes only as matched pairs of two modules of the same size that you buy at the same time. There is no such thing as a single module that will run in dual channel mode. You can install a single module, or up to 4 single modules, all of which are single channel ram, or have a pair of dual channel ram and a single module or two single modules, but all the ram will run as single channel ram in those cases.

Dual channel mode is a feature of the motherboard, not the RAM. Although the term is used all the time, there is no such thing as "dual channel RAM". But there is RAM that's sold in matched pairs (dual channel kit) to be run in dual channel mode on a board that supports it.

You can run a pair of RAM sticks in dual channel mode or 2 pairs of RAM sticks in dual channel mode. And under certain conditions, some boards actually enable dual channel mode when 3 sticks of RAM are used. The SHUTTLE AN35N-ULTRA is one such board.

Tubes
I have bought individual sticks of RAM at Bestbuy and paired them up to run in dual channel in an AthlonXP system. I missed it originally but the poster did say 2 1GB sticks and 2 512MB sticks.

Until now I wasn't aware of a board that did this.
