I already have Vista x64 installed and using as my main OS. I also have my old hard drive running XP from my old PC which i want to boot. What ive been doing is just unplugging and plugging in the SATA cable for the hard drive i want to boot from before turning my PC on. But is there and easier way to do this, with out formatting?

If the old hard drive is out of an OEM computer like Dell, HP, etc. then it may not work at all. If a full version of WinXP is installed on the drive you should perform a repair installation while you have the other hard drive disconnected. Then you can either fix the Windows boot logger or use a third party one as jam suggested. The advantage of the third party is the OSes are totally independent of each other, unlike the Windows version.
