I have a new motherboard with two memory slots using ddr pc 2700 memory. Do I need to fill both slots or can I use just one memory stick in one slot and leave the other slot empty? Thanks!

Well depends on how much memory are you looking For ?
you Can use One Slot ? lets says you have 256MB DDR pc 2700 or 512MB Etc.....
& You Can leave the other Slot empty
But If you have enough money to Burn then
Put 1 Stick of 512MB DDR on slot 1
& another Stick of 512MB DDR on Slot 2
Just do not mismatch the Ram

The short answer to your question is YES; in fact you can insert a single memory stick in either one, and it will work. As far as the second slot is concerned, the issue of NOT matching memory mentioned by poweraid above, only applies to motherboards that support dual channel mode.
