Back-up and Recovery Options

Microsoft Windows 2003 server - 5 users

Specs: Win 2k3 Server SP2
I have 2 Identical Dell 1950 Servers with eSATA Areca 8 port Raid cards with 7 drives in Raid 5 with one drive hot spare. This system has to be VERY high availability and redundant. I attempted to run back-ups with Symantec BESR 8.5.3 but they currently do not support the eSATA card.
What is the best way to either back-up the Primary server entirely, or provide 1 for 1 mirroring?

Virtual servers in a blade server
MS or third party clustering
NTbackup to a tape drive with system state.

The virtualization option was rejected early in development.

Clustering may be an option, I will look further into that. I was
told that the clustering option was fairly difficult or labor
intensive to set-up. and I will have to turn over the system to
relatively inexperienced personnel eventually.

Tape becomes some what of a both with storage...the system
capacity is approximately 3.8 TB. Expected usage is about
1.7 - 2.5 TB
